I know that the recipe is pretty simple to make, but I love this stuff and I get it whenever I can at a Thai restaurant like I did today. I am a big fan of Thai food and have been since the first time I went to a Thai restaurant many, many moons ago. I was living in California and went to lunch with one of my work friends. I was a recently wed young lady who was adjusting to life in a different time zone from most of my family and friends and  being married to a man who was from the other side of the world. Now that I think about it, I was adjusting to a lot, but at the time it was just the beginning of a process of sorting out my regular life.
