I just can’t get enough.

I didn’t even like them when I was a kid, but for the past two or three years, come autumn, I can’t seem to get enough pumpkin. Pumpkin shakes. Pumpkin pie. Pumpkin bread. Pumpkin soup. Any pumpkin I can get my hands on. There is even pumpkin flavored ice cream in the grocer’s freezer. I’ve even been known to eat a pumpkin doughnut or two. I just can’t stop… lol. I had a feeling that there must be something healthy in the pumpkins because I always felt much better after eating said pumpkin products.

Maybe I was just trying to justify my obsession, trying to make myself feel good about all of those pumpkin goods. Who knows. BUT… They are healthy. Now all the cream and stuff people put em with has to be consumed in moderation, but the pumpkin itself is low in calories, yet rich in potassium, magnesium and iron. Its seeds are used to treat kidney, gallbladder and prostate ailments. Whew. I feel so much better. Now if I could find a nutrient list like this for prime rib or something…
