This week, I decided to try my hand at some more adventurous dishes. I have two HUGE cookbooks that I have managed to use once or twice. One contains recipes from all over the world and the other has healthier recipes. Yesterday I made a pasta salad with a pesto vinaigrette and it really turned out nicely. Everybody seemed to really like it. Today, I’m making a greek rice salad with feta or an eggplant fettucini. My husband was looking around trying to take leftovers for lunch. I felt good to know that he liked it that much that he wanted to have it the next day.
Cooking is a really great stress reliever for me. Growing up, my sisters and I were my mom’s little sous chefs. We pulled the ribs out of greens, pulled peas out of their hulls, “snapped” the snap beans, and did everything else with the dinner ingredients. I had seriously considered taking a cooking class at the Williams and Sonoma next door to my hubby’s office, but maybe this Spring. It’s a good thing he works in that part of town and not me. There are so many great shops and restaurants that I’d shop at lunch. Daily. Not to mention stopping off after work. I’d get home really late, but I’d have a slammin shoe and bag wardrobe. I keep offering to join him for lunch, though. Hee hee hee…
Oh yes, Al saw this and insisted that I include the fact that he helped me out with some quesadillas. He is getting good in the kitchen 🙂
