I’ve had dishes cooked with vanilla bean, but I never attempted to cook with it myself. I had a really great gourmet vanilla extract and it served my purposes pretty well, or so I thought. Today, I made some cookies with it and WOW. It was wonderful. It was vanilla flavor, but stronger and fresher and cleaner. It was really great. Makes me think that maybe I can do this cooking of nice things on the regular. Who knows.
I may never use vanilla extract again.

Or you can get the vanilla beans from a gourmet supermarket which are supposed to be a bit expensive but really good. When you think about it though pure vanilla extract is a little pricey too.

Yeah, either way, I guess, I will pay for the vanilla flavor.
